These beans are sourced from Finca (Farm) Los Suspiros by farmers Dr. Fredy Morales and Alex Palacios in the small town of San Gaspar Ixchil, Guatemala.
Dr. Fredy Morales operates his family-farm in San Pedro Necta, Finca Rosma. He is also the central person in Huehuetenango who has helped to make Proyecto Xinabajul a success by spreading the word about our project and managing all of our buying in the region. "Los Suspiros" means "the sighs". I like to imagine a breath of fresh air, which you get a lot of when taking in the endless vistas of massive valleys when visiting the area. Los Suspiros is mostly planted in Caturra and Bourbon and they are producing washed, honey and natural process coffees. This is a full honey-process lot our favorite of the samples we tried. Altitude at Los Suspiros starts is right around 1800 meters above sea level.
This one really shines when prepared as a pour over, or French press method.
